Cauliflower Florettes in Vinaigrette
The next time
you are breaking down a cauliflower into florettes, save several handfuls.
Microwave or steam them. Once softened, place them in a container, dress with
olive oil, red wine vinegar, salt and pepper, toss them in this dressing, then
refrigerate. Can add to salads, use as a side, or make as a salad with olives
and greens.
