Trader Joe’s Vegetable Kabobs with Peruvian Style Marinade and Rice

Back to more mundane matters, such as making a weeknight dinner. Vegetable kabob elements, the onions, the mushrooms, the peppers have different cooking times. You can disassemble them and cook them separately, but nah. There is another way - chopping them up and dressing them to roast in a delicious Peruvian style marinade on an olive oil coated pan. Lime juice is best for this recipe, fine to use lemons.
· 1 Trader Joe's Vegetable Kabob package
· Olive Oil
· Ingredients for marinade for the vegetables: Soy Sauce, Lime Juice, Cayenne Pepper or Trader Joe’s Chile Lime Spice, Garlic Powder, Coconut Aminos if available
· Rice or Rice Pilaf mix or rice of your choice

Kabobs with Peruvian Style Marinade:
Chop the Vegetable Kabobs. Coase chop.
Prepare the Peruvian-style marinade.
To taste.
Get chef-y, add lime zest.
Place on an olive oil coated pan and mix with Salt and Pepper.
Pour the marinade over the veg and mix again.
Roast at 350 degrees, for one half hour.
My oven is new, so it’s 345 degrees.
Once removed from oven, stir the vegetables.
Combine and serve with your favorite rice pilaf or rice mix.
Reuse the kabob sticks for a fruit dessert.
