Trader Joe’s Chocolate Mochi Mix Made Slightly Healthier

While this baking mix proved to be too sweet, there are a couple things that can make it slightly healthier. Following the baking mix directions, instead of 4 tablespoons of melted butter, substitute olive oil.  For the frosting, instead of a stick of butter, use 1 cup of creamy peanut butter, 1 container of plain Greek yogurt added to about 4 tablespoons of the powdered frosting mix.

Since the baking mix is super sweet, next time around, I would leave out the powdered frosting mix entirely, and mix a frosting of simply peanut butter and yogurt, balancing out the cake’s sweetness.
