Savory Stuffed Pumpkin

I have been fascinated with trying this ever since chef Daniel Boulud cooked an enormous pumpkin on Anthony Bourdain’s show.

In real life, this version is easy, use a sugar pumpkin for cooking. Make a lid with the top of the pumpkin, scoop the inside out, reserve the seeds to roast (Use a fork to separate the seeds, roast 15-20 minutes, with olive oil salt and pepper).

Roast the pumpkin at 350 degrees for 2 hours.  Remove from oven and stuff the pumpkin with pre-cooked rice, garlic, cheese, onion, roast tomatoes, a little vegetable broth to soften, then roast for another half hour. Remove from oven. Top the savory mix with the roasted pumpkin seeds, if you like.

Nice catering or party trick.
