Organic Chicken Vegetable Mole Soup
Roasted a chicken in mole sauce then made stock from the bones.
Sauteed well
chopped cauliflower, kale, scallions, onions, tomatoes and anything else in the house
with olive oil. Sauteed to meld, with about a tablespoon of mole rojo sauce and
a cube of garlic, to make a sofrito, of sorts. Then, added stock and some
bite-sized pieces of chicken. Reduced for no longer than 45 minutes. Add water
if need be.
