Roasted Garlic Mashed Potatoes with Hummus
Easy way to veganize (or not!) mashed potatoes.
Ingredients:
· Trader
Joe’s Organic Potatoes – 1 package
· Trader
Joe’s Roasted Garlic Hummus – 1 container
· 1/3
cup of good quality Olive Oil
· Lemon
Squeeze
· Salt
· Pepper
Boil or steam potatoes. Place them in a bowl. Mash with Roasted Garlic Hummus. Incorporate olive oil and lemon squeeze, salt and pepper into the mash. Add more olive oil if needed.
Vegetarian additions: add vegetable broth, grated Pecorino Romano, plain yogurt, and spices, such as Trader Joe’s Za’Atar Seasoning Blend.
