Summer Chill Gazpacho 🍅

A chilled, spicy, cold vegetable soup for the summer — Jersey tomatoes are a natural match up with Spain’s most storied soup during World Cup fever. 

Ingredients

  • 2 heirloom or in season Jersey field tomatoes, sliced
  • 1 cucumber, cubed
  • 2 Dorot garlic cubes or 2 garlic cloves
  • 1/3 cup olive oil, such as:  https://amzn.to/4aROroR
  • 2 tablespoons honey to taste (optional, but great for balance)
  • Salt + pepper
  • Ice
  • Water

Method

  1. Combine tomatoes, cucumber, garlic, olive oil, honey, salt and pepper in a blender.
  2. Add ice and a splash of water.
  3. Blend until you reach a cold, pour-able soup consistency.
  4. Definitely Chill.
  5. Serve cold with a drizzle of olive oil.

Notes

  • My addition:  Honey works as a natural thickener and counter point to bitter vegetable notes.
  • Whole Foods prepared version uses wheat as a thickener; traditional Spanish gazpacho uses bread — I prefer honey, and honestly, it works, especially for a low-gluten lifestyle. (The use of bread in Spanish cuisine is one of many examples of poor man’s cooking technique that evolved into haute cuisine – the subject of another post. So is low-gluten, not no gluten, but we’ll get to that.)
  • Sensitive to acid in tomatoes?  You can change the cucumber-tomato ratio. Add more cucumber, less tomato, more spices. 

Vaya! Gazpacho 

One of Gazpacho’s many appeals is flexibility:

Roasted Tomatoes

Roast tomatoes at 425°F until blistered. Blend them in for a smoky, winter‑friendly depth. Even more smoky? Add pimentón.

Olive Juice Splash

A tablespoon of olive‑jar brine adds salinity and Mediterranean funk — a tiny martini moment.

Shredded Manchego

A snowy pile on top gives salty lift and richness without heaviness.

Manchego Bocadillo

Serve a warm Manchego bocadillo alongside the cold soup. Perfect contrast.

Roasted Red Pepper Purée

Blend in a spoonful for sweetness, enhanced color. Andalusian vibes.

Pickle Juice or Diced Pickles

Brightens everything. Adds acidity without lemon.

Chile Lime Seasoning

Trader Joe’s Chile Lime wakes up the top layer. Sprinkle right before serving and stir.

Garden Herbs

Parsley, basil, cilantro, chives — blended or sprinkled.  A pretty, green‑flecked summer soup with depth. 

Salt-and-Pepper Broiled Shrimp

Serve with salt‑and‑pepper broiled or grilled shrimp in olive oil for a hot‑cold Spanish acid trip.

Winter Garden Patch Hack

While TJ’s Low Sodium Garden Patch juice is discontinued (RIP, they do this a lot), you can make winter gazpacho with other good quality tomato juice.
