Secret Sauce

A ritual for Fall:
Purchase a few local field tomatoes from the Farmer’s Market. Wash them off and freeze them. In the depths of winter, take them out of the freezer and defrost. Their skins will slip right off, and make a quick tomato sauce: chop them, sauté them in good olive oil, salt and pepper, then gently blend. On a bleak winter’s day before the big thaw, you’ll have a sauce, while not proper, still good enough for your pasta, providing enough of the summer sun to tide you over until Spring.
Wish I had room in the freezer for more.
