Skillet Chicken Parmigiana - With A Healthy Zucchini Twist

Ingredients
- Organic thin‑sliced chicken
- Salt, pepper, and select spices
- 1 large tomato, thinly sliced
- 2 large zucchini, sliced into rounds
- 1 cup part‑skim organic mozzarella
- Olive oil
Zucchini Sauce Prep
- Preheat oven to 375°F.
- Either sauté or broil/roast the zucchini rounds with salt and pepper on a sheet pan.
- Let them cool completely.
- Blend ¾ of the zucchini into a smooth green sauce.
- Set aside — this can be made ahead and refrigerated.
Chicken Parmigiana (Skillet Method)
- In a large skillet, heat olive oil over medium.
- Sauté the chicken for 5 minutes per side with salt and pepper.
- While the chicken cooks, place the tomato slices into the skillet to soften and cook down.
- Turn off the heat.
- Spoon the zucchini sauce over the chicken.
- Layer the softened tomato slices on top.
- Sprinkle generously with mozzarella.
- Transfer the skillet to the oven and bake for 12 minutes or more, until the cheese melts and the chicken is fully cooked.
- Serve with the remaining zucchini rounds on the side.
Notes
The zucchini sauce is also excellent over pasta with Pecorino Romano — a second dish from the same prep, if you make more.
