Variations on Bon Appétit’s Creamy Giardiniera Dip Recipe

Image
The most difficult thing about this recipe is spelling Giardiniera. Healthied it up.  Makes about 2 cups Ingredients 8 oz. cream cheese, room temperature - Substitute tofu or plant-based cream cheese 1 oz. Parmesan, finely grated (about ½ cup) – good quality ½ cup Sour Cream – Substitute 2% or 0% Greek yogurt, Kosher salt, freshly ground pepper 1 cup drained coarsely chopped oil-based giardiniera , plus more for serving and oil from the jar for drizzling – Substitute vinegar-based giardiniera!   The subject of much discussion in the Comments section.   Jeff’s Garden is a great brand, it ain’t oil based, and I buy it when it’s on sale at Whole Foods, in order to build lower-fat Muffuletta sandwiches. Olive Oil – you can add a little if you feel guilty about not following the directions about using the oil-based giardiniera. You should because the oil balances out the vinegar.   Preparation Follow the same directions with the substitute ingredients:...

Crispy Sheet Pan Broccoli with Parmesan 🥦

Image
This simple, social media inspired broccoli flavor bomb crushed it. It’s dialed in.    Look for comparables, gotta check the comps, all over the internet. Package of Broccoli Florettes Shredded Parmesan Trader Joe’s Italian Soffritto seasoning blend Olive Oil Microwave the broccoli florettes for about four and half minutes or boil until tender. Place them separated on a sheet pan (my very favorite: the  Nordic Ware Naturals Half Sheet, Made in USA, covered with an oiled baking sheet or oiled tin foil.   Flatten each of the florettes with a masher or kitchen item of your choice.   Then, drag each of them in the oil to cover both sides of the florette. Cover each of the florettes with the Soffritto seasoning blend or spices of your choice. Sprinkle shredded parmesan liberally on each. Bake for about 40 minutes on 350 degrees but check after 30 minutes. The florettes should have the texture of crisps after they cool.

My Trader Joe’s Half Day Juice Cleanse

Image
Hacked more expensive juice offerings and came up with this two-meal juice cleanse plan. I am not a nutritionist nor a qualified medical professional though skipping two meals probably wouldn’t be a big concern. (I realize that some people are advised to eat frequently.)   There will be no mention of the word *detox* in this blog post. I devised this half day cleanse to give my digestive tract a break, to take a break from post-pandemic cooking, which is tough, and to get more mindful about food consumption. With a total of 520 calories, this plan may possibly meet the caloric requirements for two meals. For a half day, that’s two meals, breakfast and lunch, one juice every two hours. 1 Cold Pressed Juice Green, 90 calories 1 Cold Pressed Juice Red, 110 calories 1 Banana & Almond Butter Protein Smoothie, 320 calories – for the home stretch Add a Suja Cold-Pressed Lemon Ginger Cayenne depending on your ambition. Followed up with a lighter than usual dinner.  A...
